Original Recipe: Roasted Corn & Avocado Salsa

These long hot days of summer call for an afternoon off. Call your girlfriend over, whip up a batch of this fresh summer salsa, open a bag of tortilla chips, and sit down with a glass or two of your favorite summer Chardonnay. We like La Crema.
Because sometimes it's just too hot to work.

1 can Rotel tomatoes
3 TBL apple cider vinegar
1 tsp garlic salt
1 cup chopped green onions
1 TBL fresh chopped green pepper
1/4 cup veg. oil
1 sm ear of corn roasted and cut off husk
2 med ripe avocados chopped
1/3 c. canned black beans rinsed and drained (optional)
salt and pepper to taste

Mix all ingredients and chill for at least two hours before serving.
